Celebrate National Cookie Day and get into the Christmas spirit with these Christmas Pinwheel Cookies. This is a fun, easy, and delicious Christmas cookie recipe you can make with the whole family!

Christmas Pinwheel Cookies

Prep Time: 30 minutes
Cook Time: 10 minutes
Serves: 12

Ingredients:

  • 2 cups flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup or two sticks of butter
  • 1 cup sugar
  • 1 egg
  • 1 tbsp vanilla extract
  • Red food dye
  • ½ cup sprinkles

Instructions:

  1. In a large bowl add flour, baking powder, and salt. Whisk to combine and set aside.
  2. In a stand mixer bowl fitted with a paddle attachment add butter, sugar and beat until soft and fluffy. Once fluffy, add egg, vanilla extract and mix until combined.
  3. Gradually incorporate dry ingredients, ½ cup at a time a dough ball forms. Scrape off the sides if needed.
  4. Split the dough, remove one portion and set aside. With the remaining dough add red food coloring for your desired amount of red. Mix until the dye is well combined.
  5. Remove red dough and place on plastic wrap and cover completely. Roll out dough with a rolling pin until a 9”x12” rectangle forms. Repeat this with the plain dough until two dough rectangles form. Place in the fridge to harden, about 15 minutes.
  6. Preheat oven to 350 degrees.
  7. Remove plastic wrap and place dough rectangles on top of each other. Begin rolling the dough on the longer side until a log forms. Cut ½” cookies and set aside.
  8. Pour sprinkles on a plate and roll the outer side of the cookies in sprinkles, pressing down as you go. Place on a baking sheet and bake cookies for about 10 minutes until fully baked.
